Vegan Recipe of The Day: Spaghetti Pie

Ingredients:
Fresh basil pieces for garnishing
1 tablespoon olive oil
1 teaspoon dried ground basil
6 oz uncooked spaghetti
1 teaspoon garlic powder
1½ tablespoons mild yellow miso paste*
15 oz package extra firm silken tofu
2 cups vegan mozzarella
12 oz package Yves Meatless Ground Round
10 oz package frozen spinach thawed & squeezed dry
1½ cups dairy-free meat-free marinara sauce
2 tablespoons nutritional yeast flake
Directions:
1. Set your oven to 375 degrees Fahrenheit for preheating. Spray down a 9-inch pie pan with vegetable oil cooking spray.
2. Cook your 6 oz of spaghetti pasta, according to the instructions included on the packaging. Drop your miso paste, garlic powder, dried basil, nutritional yeast flakes, olive oil, and tofu into a food processor and pulse until it becomes smooth. Stir in one cup of the vegan mozzarella cheese.
3. When your pasta has finished cooking, strain the liquid from it and add half of the tofu mixture from your food processor into the pasta. Stir thoroughly until all of the pasta has been completely coated. Press it into your prepared pie plate.
4. Add the pressed and dry frozen spinach to the remainder of your tofu mixture. Pulse it a few times until it has combined well, and has taken on a marbled look. Use a spoon to scoop this mixture over the pasta in the pie dish.
5. Stir your veggie crumbs and marinara sauce together in a small bowl. Continue stirring until it has become well combined and then pour it over the layer of tofu.
6. Top it all off with shredded vegan mozzarella cheese. Bake in the oven at 375 degrees Fahrenheit for 15 to 20 minutes or until the cheese has fully melted. Let it sit for 5 minutes to cool and then slice and serve it. For added flavor, garnished with fresh chopped basil.
