Vegan Recipe of The Day: Berry Poptarts

This vegan recipe, just like every other vegan recipe of the day, is not one of my own, but one contributed by passionate vegans from the community. If you would like your recipe featured on my blog, please email it to jackalhead@live.com along with a picture of it.

Ingredients:

  • vanilla glaze

  • 1 tbsp raw sugar for topping

  • 1 cup frozen mixed berries

  • 4 tbsp ice cold tap water

  • 2/3 cup cold vegan butter (Earth Balance recommended)

  • pinch of salt

  • 1 cup whole wheat pastry flour

  • 1 cup unbleached all-purpose flour

Directions:

1. Preheat oven to 375 degrees F (190 C) and then line a sheet pan with parchment paper.

2. Put together the compote by putting berries in a saucepan over moderate heat. Cook for 5-8 minutes with a cover on the saucepan, mixing often and breaking down using a spoon.

3. Put in some teaspoons of sugar to help you enhance the sweetness, if desired. We used 1 tsp. raw sugar.

4. Transfer into a dish to cool.

5. To make crust, blend flour as well as salt in a good sized dish, then simply cut in butter using a fork or perhaps pastry cutter right until perfectly blended.

6. Utilizing a tablespoon, drizzle cool tap water over the combination and blend using a wooden spoon until it finally begins to become a dough. We added 2-3 Tbsp - you may want to add up to 5 Tbsp. It ought to be moist enough to hold together as a ball, yet not overly sticky to knead.
