Vegan Recipe of The Day: Homemade Hot Pockets

These vegan hot pockets are one of the more interesting lunch / dinner recipes you'll find so far on this website. They almost taste a bit like calzones, if you've ever tried one of those before. For the fillings, you can use whatever your imagination can come up with, but for this version of the recipe, we are using seitan sausage and vegan cheese.

Ingredients:

1. large pinch of bread topping

2. 1/4 cup of water

3. 1/4 tsp. salt

4. 1/2 tsp. garlic powder

5. 1/2 tsp. onion powder

6. 1/2 tsp. sugar

7. 1 tsp. baking powder

8. 1 tbsp. olive oil

9. 1 tbsp. cornmeal

10. 1/2 cup flour

11. pizza sauce

12. seitan sausage, chopped up finely

13. vegan cheese, shredded

Directions:

1. Set your oven to 375 degrees F for preheating.

2. Combine your salt, garlic powder, onion powder, sugar, baking powder, olive oil, cornmeal and flour together and stir to mix well, until it resembles coarse meal. Pour in a tiny bit of your water at a time, mixing it into a dough. Continue to add water until the mixture becomes a doughy ball. This shouldn't take more than 1/4 cup of water.

3. Sprinkle a surface with cornmeal and apply some to a rolling pin as well, in order to prevent the dough from sticking. Divide the dough into two portions and roll each portion out into a smooth, thin circle.

4. Combine your pizza sauce with your seitan sausage and shredded vegan cheese and whip together to mix into a topping. Pour the topping onto each of your dough circles. Leave about a 1/2 inch of the dough uncovered around the perimeter of the edge. Do not over-stuff!

5. Fold one side of each dough circle over the top and press along the edges to seal it shut.

6. Oil a baking sheet well and place your hot pockets onto it. Brush the tops of your hot pockets with olive oil and sprinkle them with the bread topping.

7. Bake the pizza pockets at 375 F for 20 minutes or until the tops and the edges are lightly browned and warmed through. Allow to cool before eating.
