Vegan Recipe of The Day: Cooler Ranch Doritos

If you're looking for a great side to go with any vegan sandwich for lunch, look no further! These home made cooler ranch Doritos are completely vegan and much healthier than the kind you can buy in a bag at the super market.

This vegan recipe, just like every other vegan recipe of the day, is not one of my own, but one contributed by passionate vegans from the community. If you would like your recipe featured on my blog, please email it to jackalhead@live.com along with a picture of it.

Ingredients:

1. 1 tbsp. olive oil

2. 6 corn tortillas (try to buy the thinner kind, so when they bake they aren't chewy in the center.)

3. 1 tsp. sea salt

4. 2 tsp. dried chives

5. 2 tsp. dried parsley

6. 2 tsp. garlic powder

7. 2 tsp. onion powder

8. 1/4 cup nutritional yeast

Directions:

1. Set your oven to 350 degrees F for preheating and line a baking sheet with parchment paper.

2. Stack your corn tortillas one on top of the other and cut them into 8 slices.

3. Put all of your newly created "chip" slices into a large-sized bowl and drizzle your olive oil over them until each piece is covered thoroughly.

4. Combine your sea salt, chives, parsley, garlic powder, onion powder and nutritional yeast together in a small bowl. Stir to blend and mix the seasoning together thoroughly.

5. Take a large spoonful of the seasoning and sprinkle it over your olive oil-covered chips. Repeat this step and flip your chips around in the bowl as many times as you need to in order to ensure each side of each chip is completely covered in the seasoning.

6. Lay out your chips on your lined baking sheet and put in the oven to bake at 350 F for 13 to 15 minute. Rotate your pan about 7 minutes of the way through.

7. You'll know the chips are finished when the edges of your chips become lightly browned. Pay careful attention to make sure your chips don't burn the last 4 minutes, as they have a tendency to do so. Allow to cool before eating.
