Vegan Recipe of The Day: Baked Polenta Fries

Preparation Time: 45 minutes

Why settle for regular fries when you can enjoy the lush, rich flavor and more delicious texture of home made polenta fries? This dish takes 45 minutes to prepare (not counting the time it needs to sit in the refrigerator overnight), but it is so worth it! These fries make an excellent side to the mini BBQ tofu burger recipe that is also listed on this site.

This vegan recipe, just like every other vegan recipe of the day, is not one of my own, but one contributed by passionate vegans from the community. If you would like your recipe featured on my blog, please email it to jackalhead@live.com along with a picture of it.

Ingredients:

1. Olive oil to brush

2. Salt and pepper to taste

3. 1/2 tsp. dried thyme

4. 1/2 cup nutritional yeast

5. 1 tbsp. unsalted vegan butter

6. 1 1/2 cups polenta

7. 1 cup unsweetened almond milk

8. 2 cups organic vegetable broth

Directions:

1. Grease an 8 inch by 8 inch pan and line it with parchment paper, with two sides overhanging to use as handles.

2. Bring your vegetable broth and almond milk to a boil in a large saucepan and then turn the heat down to medium.

3. Begin to gradually add your polenta into the sauce pan, while whisking it constantly until it becomes thick and creamy. This should take about 7 to 8 minutes.

4. Remove the saucepan from the heat source and add vegan butter, thyme, nutritional yeast and salt and pepper to suit your taste. Stir it all together to combine.

5. Transfer the contents to a prepared pan and press the polenta into an even layer. Smooth over the top of the polenta using a spatula.

6. Refrigerate overnight.

7. When you are ready to bake, preheat your oven to 450 F and gently lift out the slab of polenta using parchment handles and transfer it to a cutting board. Cut your polenta into 18 different 4 inch by 1 inch slices and place onto your greased baking sheet.

8. Use a baking brush to brush each slice with olive oil and then sprinkle them with salt.

9. Bake the polenta fries for 15 minutes and then carefully flip them over and bake another 15 minutes. The fries should become crispy and brown at the edges.

10. Allow to cool before serving and enjoy!
