Vegan Recipe of The Day: Pizza Rolls

If you miss pizza rolls (a popular snack from the 90's), you're in luck, cause today's vegan recipe of the day is the vegan version of those beloved morsels. These, being home made, taste much better than the non-vegan kind you can purchase from the store!
This vegan recipe, just like every other vegan recipe of the day, is not one of my own, but one contributed by passionate vegans from the community. If you would like your recipe featured on my blog, please email it to jackalhead@live.com along with a picture of it.

Ingredients:
1. 4 tbsp. marinara sauce
2. 1/2 cup vegan cheese, diced finely
3. 1/4 cup water
4. 1/2 tsp. salt
5. 2 tbsp. aquafaba
6. 4.5 ounces of all-purpose flour + 1 tsp vital wheat gluten (~1 cup)
Directions:
1. Mix your aquafaba, salt, vital wheat gluten and all-purpose flour together in a food processor outfitted with a dough hook. Continue blending until small crumbles are formed.
2. Slowly begin adding water, while it continues processing Your dough should start to stick together in the shape of a ball. You probably won't need all of the water, so take it slowly.
3. After a ball is formed, continue kneading with your food processor for 10 to 20 more seconds.
4. Wrap your dough in plastic wrap and let it sit to rest for 35 minutes. When it is finished resting, divide it into two equal portions and roll it out on a lightly floured surface.
5. Roll each of your two portions to about 1/8 of an inch, in terms of thickness. A little thicker is okay. Shape them into long rectangular shapes.
6. Combine your 1/2 cup of vegan cheese and 4 tbsp. of marinara sauce together in a bowl and dollop 1 tbsp. portions along the dough, evenly spread apart from one another. These dollops will be the fillings for each of your pizza rolls.
7. Wet the dough around the perimeter of the filling and top it with the other portion of rolled dough. Press around the perimeter of the dough to seal it to the lower piece of dough.
8. Cut the dough with a knife to separate each dollop of filling in the dough and to distinguish each pizza roll.
9. Repeat this process of rolling and filling with the leftover dough from cutting.
10. Heat a cup of neutral oil in cast iron skillet until moving lines become visible through the oil.
11. Fry each of your pizza rolls in the skillet until each side is brown -- flip over when one side is finished, to allow the other side to fry.
12. Drain on some clean power towels and serve.
