Vegan Recipe of The Day: Cuban Style Black Beans

Today's vegan recipe of the day is actually a recipe from Cuba. Cuban style black beans are basically black beans with garlic, minced green pepper, onion and a bit of sugar, vinegar, olive oil and more.

Ingredients:
1. 2 tbsp. olive oil
2. 2 tbsp. wine
3. 2 tbsp. vinegar
4. 1 bay leaf
5. 1 tsp. sugar
6. 1/4 tsp dried oregano
7. 1/2 tsp. pepper
8. 4 tsp. salt
9. 4 cloves of garlic, pounded
10. 1 green bell pepper, minced
11. 1 large onion, minced
12. 2/3 cup olive oil
13. 10 cups water
14. 1 green bell pepper, chopped
15. 1 lb black beans, dried
Directions:
1. Thoroughly wash and rinse your beans.
2. Soak the beans with the first bell pepper (chopped) in water until they become swollen. This may take as long as overnight.
3. Cook rinsed beans and first bell pepper for 45 minutes.
4. Heat up 2 tbsp. of olive oil in a medium-sized pan.
5. Add in the onion, the second bell pepper (minced) and garlic. Cook until they become soft.
6. Add your 1 cup of cooked beans into the pan and mash them thoroughly.
7. Add the mixture from your pan into bean pot.
8. Add your dry seasonings to the bean pot as well.
9. Cover the pot and boil for a whole hour.
10. Mix in your wine and vinegar.
11. Cover the pot again and allow its contents to simmer for 1 hour.
12. If your broth has become too watery, uncover it and cook until it begins to thicken.
13. Stir in the olive oil and serve.
